How to make kadhai chicken
Ingredients:
1 Boneless chicken (600 gms)
2 tsps. Oil
Salt to taste
1 tsps whole garam masala
2 dry red chillies
3 tbsps. vegetable oil
3 large onions, finely chopped
1 tbsp. coriander powder
1 tbsp. red chilli powder
1 tbsp. cumin powder
1 tsp. garam masala powder (available at Indian stores)
3 green chillies to test (remove the seeds)
4 tomatoes pureed
6 tbsps. fresh coriander (cilantro) finely chopped
1 tbsp. ginger-garlic paste
Preparations:
In a kadhai (wok), heat the oil. Fry the crushed coriander seeds, whole garam masala and dry red chillies for a few seconds. Add the chopped onions. Fry till light brown. Add the ginger-garlic paste. Continue frying the onions till golden brown.
Add the spices- coriander powder, red chilli powder, cumin powder and garam masala powder.
Cut the chicken into small pieces and add it to the wok. Add the slit green chillies.
Stir fry for about 8 minutes, till the chicken is golden brown.
Add the tomato puree and salt.
Bring to a boil. Cover and cook on low heat for about 20 minutes or till the chicken are tender.
Increase heat, stir till gravy is thick and oil separates.
Serve hot, garnished with coriander leaves Serve hot with chapatti or naan.
